What's Cookin'?
Pumpkin Roll

Cake                                       Filling
3 eggs                                     2 tbs margarine
1 cup sugar                             8 oz. cream cheese
1 can pumpkin                         1 tsp vanilla
1 tsp baking soda                     1 cup powdered sugar
1/2 tsp cinnamon
3/4 cup flour
(after baking - 1/2 cup powdered sugar)

Mix together the ingredients for the cake. Line a large cookie sheet with wax paper and spray with cooking spray. Pour mixture on to sprayed wax paper. Bake at 350o for 15 minutes.

Carefully turn cake out on to another piece of clean wax paper. Sprinkle with 1/2 cup powdered sugar and let cool.

Creme together the ingredients for the filling and spread over cooled cake. Roll cake towards you. Wrap in foil and chill for at least 3 hours.

Slice and give thanks!
