What's Cookin'?
Cheese Biscuits

1/2 c. butter (no substitutes)
1/2 lb. sharp Cheddar cheese, shredded
2 c. flour
1/2 tsp.salt
Cayenne pepper to taste
2 Tbsp. light cream

Preheat oven to 350o. Cream the butter and cheese together in a large bowl. In a separate bowl, combine the flour, salt, and pepper and mix well. Spoon the flour mixture into the butter mixture 1 tablespoon at a time, mixing well after each addition. Add the cream and mix well. Roll out the dough on a floured surface and cut with small cutter (quarter or half-dollar size.) Prick each round with a fork. Place on an ungreased baking sheet and bake until lightly browned, 10 to 12 minutes.

Yield: 4 dozen.
